-About storing rice-
In rice grown naturally without the use of pesticides, if the conditions are right for insects, they will thrive (because pesticides are not used to kill insect eggs in advance).

If you purchase in bulk, we will inform you of the recommended storage method to prevent the rice you purchased from becoming inedible due to an infestation of insects.
①Store at temperatures below 20℃
If the temperature is high, the eggs will hatch and insects will easily appear. Please store the product in a place where the temperature is not high, such as a room on the north side or a food storage room.
2) Avoid humid places and store in a well-ventilated place.
In addition to temperature, humidity is also a major factor in egg hatching. Please store the rice in a well-ventilated place. Also, if you store the rice in the rice bag it was delivered in, it will create an environment with more eggs.
Transferring the rice to a rice bin or another bag and putting in some chili peppers together will further prevent the development of insects.
3) Please consume within 2 weeks after polishing.
When polishing rice, the rice that has had its bran layer removed is more susceptible to oxidation. To avoid losing its flavor, please consume the rice as soon as possible after polishing.

Hinohikari rice made by Motoo Hirata of Shichijo Town, Kumamoto Prefecture

Shichijo-cho is a rice-producing area in Kumamoto. If you search for it now, you will find many rice brands that come up under the name "Shichijo rice." Tomita-san and Hara-san, who are familiar faces at Purely, also grow rice here in Shichijo-cho, and they are old friends with Hirata-san, living nearby in their rice fields. Mineral-rich water flows from Mt. Happo-ga-take. Diversity has formed within the rice fields, where many "living things" live.

Since 1990, the Lotus Flower Rice Research Group has been working with rice farmers in Shichijo to research and practice a method of sowing lotus flowers in rice paddies to enrich the soil without using pesticides or fertilizers.They have also tried various other methods, such as using ducks to remove weeds, and currently grow rice using natural farming methods without the use of lotus flowers or ducks.

Mr. Hirata is not a full-time rice farmer. He also grows vegetables, and when I visited him, he was growing asparagus. Unlike rice, which is harvested once a year, the timing and soil preparation for vegetables vary depending on the crop, so I imagine it must be very hard work for him and his wife to work together.
