King oyster mushrooms grown with special attention to the "medium material" and "cultivation temperature"

King oyster mushrooms are produced in Yazu Town, located in the eastern part of Tottori Prefecture.
The medium for the king oyster mushrooms is made from cedar sawdust from the Chugoku region, which has been exposed to wind and rain for a year to remove all impurities, and then only the nutrient bodies are added. The water used is the fresh air from the lush mountains and the underground water created by those mountains.
We also keep the temperature in the cultivation room low to grow the eringi slowly. It takes 1.5 times longer from inoculation to harvest than in normal eringi cultivation, but the slow growth allows us to increase the amount of mycelium that gives the eringi their delicious flavor.
These particular manufacturing methods produce a subtle sweet aroma and delicious flavor. This king oyster mushroom contains a lot of trehalose, which is said to be effective in improving osteoporosis, and is also rich in beta-glucan, which is said to have anti-cancer properties.
