We call sake made using only rice grown without pesticides or chemical fertilizers and the brewery's well water, and made using only microorganisms within the brewery, "natural sake."
90 means that the rice has been polished 90%, meaning that only 10% of the rice has been polished off from brown rice. It is said that rice that is polished 90% is not suitable for sake brewing because it still has a lot of protein and minerals, resulting in a strong off-flavor.
But that is one of the delicious things about rice. This so-called "off-flavor" is fermented by the vitality of the microorganisms in the brewery and the skilled techniques of the brewers, resulting in sake with a distinctive acidity and umami flavor.
