[Purely Original Japanese Onion Dressing] Serve directly on the table

Following on from the "Amanatsu French Dressing," the "Onion Japanese-Style Dressing" is a part of the "Purely Table" series of "Purely Original Processed Products" that can be used as is at the dinner table.
The onions are grown by natural farmer Tomita in Kikuchi, Kumamoto Prefecture, and are slowly fried to bring out their sweetness and flavor, so the staff are unanimous in saying that no matter how many times they taste it, it's still delicious! It's a product they're confident in.

Just like the "Amanatsu French Dressing", this dressing is supervised by the chef of Purely Restaurant. The seasonings are also carefully selected, using Matsuai Food's whole soybean soy sauce made from pesticide-free ingredients from Kyushu, Shobunsu's pure rice vinegar made from naturally grown rice fermented with natural bacteria, and Sakamoto Seiyu's rapeseed white oil made using the traditional pressing method. Sun-dried lake salt, organic sugar, and sesame oil are blended in an exquisite balance. Customers who tried the prototype at the store said, "It goes well with steamed vegetables such as burdock and lotus root, and it's great as a sauce for roast beef." It is a classic Japanese dressing, but it is an additive-free, unheated raw dressing that makes use of unique safe ingredients and the deep flavor of the seasonings. It has a good aftertaste, and while retaining the individuality of each seasoning, it is beautifully balanced.

□Kumamoto Prefecture Kikuchi City Tomita's naturally grown onions This year, we had the chance to use Tomita's onions for processing. We carefully chopped the precious naturally grown onions, which are firm and full of flavor, by hand, without using any machines. Furthermore, we carefully stir-fried them to bring out the flavor, carefully avoiding burning them.
The freshness of raw onions is great, but by using fried onions, they blend well with other seasonings such as soy sauce, creating a thick texture. The result is a dressing with a subtle, gentle sweetness derived from the onions.

□ Pure rice vinegar Pure rice vinegar is made by fermenting the ingredients using naturally grown rice from Kyushu, which is grown without fertilizer or pesticides, koji mold from Marukawa Miso in Fukui Prefecture, and yeast and acetic acid bacteria from Shobunsu in Okawa City, Fukuoka Prefecture. The vinegar is fermented in traditional earthenware jars and left to ferment, allowing the bacteria to work slowly while the craftsmen wait for the time to release it from the brewery. While fermentation with chemically cultured bacteria has become mainstream in modern times, Shobunsu continues to make vinegar using real ingredients, taking time to make it in accordance with the laws of nature. It adds depth to the richness, aroma, and flavor of dressings.

□Matsuai Foods Naturally Brewed Whole Soybean Soy Sauce Made the old-fashioned way, with great care and effort, using whole soybeans, the fat and oil components of the soybeans are broken down during brewing, resulting in a soy sauce characterized by its "mellowness" and "deep umami flavor." This whole soybean soy sauce is made using whole soybeans from Aso, Kumamoto, grown without pesticides or chemical fertilizers, wheat from Kikuchi, Kumamoto, and mineral-rich sun-dried salt, without any additives. Slowly fermenting and maturing for over a year brings out the mellow aroma and rich flavor to the fullest.

□ Rapeseed Shirashime Oil The oil is a blend of organic olive oil and rapeseed oil from Sakamoto Oil. Sakamoto Oil, located in Mashiki-cho, Kumamoto Prefecture, uses non-genetically modified rapeseed as raw materials, and employs a traditional pressing method that requires no chemicals and takes time and effort to squeeze. The factory was damaged in the Kumamoto earthquake and the building was demolished. The new factory has once again been outfitted with the machinery that has been used since the company's founding. They have inherited the beliefs and manufacturing methods of their predecessors, which are "not good because it's cheap, but good things at low prices" and "We want people of child-rearing age and those who are particular about food to continue to use our products."
