In the Città della Pieve olive oil field, located in the forests of Umbria, central Italy, farm owner Michael is challenging himself to practice the ideal of growing crops using only the power of the earth, without the use of pesticides or fertilizers.
Sales in Japan began last year.
Despite the harsh weather conditions, there was little fluctuation in the yield, and the acidity of the oil was as good as usual.
Michael is a new farmer who has been practicing natural farming for five years now, and is very happy that his olive oil will be available in Japan for people to taste.
Producer Michael became interested in natural farming after reading the book "One Straw Revolution" by Japanese author Masanobu Fukuoka.
The young producers are in their 30s and want to not only grow olives, but also improve their fields and living environments, and pass on reliable food to future generations.

This year's Straw has a good balance of sweetness and spiciness, with a rich, typical olive oil flavor from Umbria in central Italy.
When combined with ingredients, it has a rich flavor similar to melted butter, and simply drizzling it raw on vegetables will elevate your dish to a more refined level.
In addition, it has an excellent ability to bring out the flavor of ingredients when heated, further enhancing the flavor of the ingredients and sharpening the flavor contours of the vegetables.

Generally, extraction methods involve the use of chemical solvents and high temperature processing, which can damage the original taste and flavor. Straw One is made from high-quality olives using a cold extraction method that does not use chemical solvents and generates as little heat as possible.

◆Oil extraction on the same day after harvest/Cold extraction method◆Fruit crushing process: The fruit is ground up including the seeds in a crusher◆The fruit is further made into a paste in the kneading process◆The oil, water, and pulp fiber are separated in the centrifugation process*The temperature is kept below 28 degrees Celsius during the centrifugation process◆Decantation process: The extracted oil is stored in a special stainless steel container without filtering, and the fine pulp is left to settle for several months and then removed◆Bottling: After decantation, the oil is bottled, labeled by hand, and shipped off to Japan◆Transportation: The fruit is transported from Italy in a constant temperature (14°C) container, with great care taken to prevent damage from heat on the ocean.
