Naturally grown burdock by Tatsuro Kunibe, Miyazaki Prefecture

Burdock has roots that grow deep underground, so it is a crop that clearly reflects the condition of the soil in the field.
If the soil is hard, the fruit will bend, and if the soil is dirty, the fruit will have a strong bitter taste.

The burdock that arrived this time from Kunibe is grown in a field that has been cultivated naturally for 11 years.
Since it has little bitterness, it only needs to be soaked in water for a short time, resulting in a clean flavor.

Kunibe's family originally ran a conventional farm, but when Kunibe started farming in 2007 they switched to organic farming.

However, as insects and diseases began to appear during cultivation, it felt unnatural, so in 2011 we switched to natural cultivation, which is still the method we use today.
(In natural cultivation, it is believed that excessive fertilizer, especially nitrogen fertilizer, leads to the development of insects and diseases.)

People have also tried harvesting seeds; at harvest time the above-ground part of the burdock is around 80cm, but by the time the seeds set they have grown to nearly 2m, taller than a person.
It has impressive, prickly seeds.

Storage method
The product photos show it washed, but it will be delivered with some dirt on it.
When the burdock arrives, wash off the soil, wrap the surface in plastic wrap and store in the refrigerator, where it will last for about a month.

Burdock salad with black sesame and mayonnaise
ごぼうの黒胡麻マヨサラダ [Ingredients] 4 servings
1/2 burdock (about 100g)
1/4 carrot (approx. 50g)

Black sesame mayonnaise
1 1/2 tablespoons mayonnaise or soy milk mayonnaise
1 1/2 tablespoons black sesame seeds
1/2 tablespoon all-purpose vinegar (you can add more if you like)
1/2 teaspoon soy sauce

【How to make】
1. Cut the burdock and carrot into thin strips. Boil water in a pot, boil the carrot briefly, remove it from the water, and then boil the burdock in the same water until it is firm to the touch. Be careful not to overcook it.
2. Combine the ingredients for the black sesame mayonnaise sauce and add the burdock and carrot from step 1.


Plum and burdock
梅ごぼう 【material】
1 burdock root (approx. 200g)
2-3 pickled plums (seeds removed and torn)
A little soy sauce
A little sesame oil (or rapeseed oil)

【How to make】
1. Cut the burdock into 3-4cm pieces. You can also pound it lightly with a rolling pin.
2. Heat oil in a pan and stir fry the burdock for a few minutes, rolling it around.
3. Add water up to about half the height of the burdock and sprinkle pickled plums on top.
Cover and bring to a boil, then reduce heat to low and simmer for 20 minutes.
Add a little soy sauce, remove the lid and simmer until the liquid is reduced.
