Kazuhiro Matsumoto, who practices natural farming in Asakura, Fukuoka Prefecture
Asakura City is located southeast of Fukuoka City, and Matsumoto Kazuhiro has been a farmer for generations. After conventional farming and organic, pesticide-free farming, he has been practicing natural farming since 2007. He is actively involved in field crops such as "Sasanishiki," a type of rice that is considered very difficult to grow in Kyushu, and "Asahi," a rare variety, as well as potatoes, eggplants, and peppers.
Dejima: Characterized by its rich flavor
Matsumoto's potatoes are an old-fashioned variety called Dejima.
It has a strong flavor and is so delicious that it can be made into a dish simply by boiling it in salt water.
It is also ideal for dishes that allow you to enjoy the flavor of the potato itself, such as potato salad, powdered potatoes, and buttered potatoes.
Of course, no pesticides or fertilizers are used. We also harvest our own seed potatoes every year, and we are particular about the seeds. You can use the whole potato, skin and all, with peace of mind when cooking.
When growing vegetables naturally without relying on pesticides or fertilizers, the most important thing is soil preparation. As one of the leaders of the Kyushu branch of the National Association for the Promotion of Natural Farming, Matsumoto-san has been studying soil preparation methodologies every year. The soil in Matsumoto-san's field is fluffy and soft, with a subtle warmth. This "soft soil that drains well and retains water" produces delicious naturally grown potatoes.
