The plums used are both pesticide-free (homegrown and from a parent's home in Oita) and red shiso (homegrown: pesticide-free).
After one or two months of salting, the plums are dried during the doyo period, and some of the white plum vinegar produced during this process is used to pickle the scallions.
If there is any plum vinegar left over from the previous year (plums that have been soaked for one year), it is mixed with new white plum vinegar and used.
Please try the umeboshi plums that the Akashi couple have made with great care.
Mr. and Mrs. Akashi live a self-sufficient, rural life in Sanzan village, Kumamoto prefecture.
They also make natural yeast bread baked in a stone oven, stone-ground tofu, and pickled plums and ginger in miso.
