[Amakusa Daio, the legendary local chicken that represents Amakusa]
<About Amakusa Daio> Amakusa Daio was bred from the Meiji to Taisho periods, and is one of the largest chickens in Japan, with the largest reaching 90cm in height and weighing 7kg. It was extremely delicious and highly valued as a hotpot in Hakata. However, due to competition from cheaper imported breeds, the number of breeders decreased, and it became extinct in the early Showa period. Kumamoto Prefecture then began restoration efforts in 1992, and 10 years later, the legendary local chicken, Amakusa Daio, was resurrected.
In Amakusa, the hometown of Amakusa Daio, Amakusa Daio poultry farming was started in December 2004 by four farmers.
<Characteristics of meat>
This chicken meat has no unpleasant odor, is light, and yet has a great flavor. It is the chicken that became the basis of Hakata Mizutaki, and has excellent qualities as a meat chicken. It is raised for a long period (about three times longer than broilers) to bring out the natural flavor of chicken. The meat has a good elasticity, and the fat is of high quality, with no unpleasant odor or greasy feeling.
The soup made from the bones is delicious and can be used in a variety of dishes, including hot pot, fried chicken, chicken curry, and mizutaki.

After leaving his previous job in 2004, he started poultry farming in earnest. He was selected by Kumamoto Prefecture as the first Amakusa Daio breeder in the Amakusa region. He raises about 9,000 Amakusa Daio chickens a year in 14 vast free-range chicken coops, which accounts for about 25% of the total number of chickens in Amakusa.
In order to deliver the Amakusa Daio chicken, which is the pride of the local area, to consumers safely and securely, we have obtained JAS certification for local chickens. Based on the JAS law, we strictly manage the traceability of the chicks' backgrounds and rearing methods. Based on the belief that "if we raise strong chickens, we don't need medicine," we feed them feed that does not contain antibiotics throughout the entire rearing period.
In addition, Purely receives special shipments of Amakusa Daio chickens raised on non-GMO (non-genetically modified) feed. Chickens raised in an open chicken coop, exposed to sunlight, are stress-free and resistant to diseases. They are raised for a long period of time, more than 120 days, which is three times longer than usual, before being shipped. Tsutsumida's Amakusa Daio chickens are light yet rich in flavor. The thighs are a bit tough, which is a characteristic of local chickens, but the more you chew them, the more flavor they release. Recommended for chicken curry, fried chicken, and hot pot dishes.
