The wheat used to make somen noodles is naturally grown in Kyushu. The variety is Minami-no-kaori, which has a good firmness and is said to be the best variety for somen noodles.

Naturally grown wheat is milled and kneaded with solar lake salt, and the resulting product is additive-free.

One bag contains 200g and is enough for about 2 people. Boil in boiling water for about 2 minutes and eat in your favorite way.

The only ingredient added is solar lake salt from Inner Mongolia. The ingredients are as simple as possible, with no unnecessary ingredients. Made only with naturally grown wheat and salt, no oil is used.

The flour is produced at a local organic farm in Kikuchi City, Kumamoto Prefecture.

We ask Mr. Takano of his organic farm in Shichijo-cho, Kikuchi City, Kumamoto Prefecture to mill the flour.

The organic farm has been certified by the JAS Organic Standards for 15 years, and is committed to the company philosophy of "earth-friendly agriculture," and is involved in everything from production and processing to distribution, with a focus on naturally grown rice.The facility is equipped with machinery to pursue "delicious taste" and "safety and security," and has a well-maintained hygienic environment.

Purely's wheat flour is milled using the Yanagihara roll mill, which is excellent at minimizing the inclusion of wheat bran and extracting only the endosperm.

To prevent foreign matter from getting into the flour, most traditional flour mills are installed directly on the ground, but on organic farms, the flour milling machinery is installed about 50 cm higher.

Takano himself is also dedicated to growing rice naturally in Shichijo-cho, Kikuchi City, Kumamoto Prefecture, which is known as the rice capital of Kumamoto.

At first, they focused on growing the rice, but to deliver it to customers, they had to polish the rice and barley. To improve the quality, they started to do the final process in-house, and that's how they got to the current stage of producing and processing the rice.

Purely's naturally grown wheat is milled with Takano's passion and kindness.

The noodles are made at Kuriki Shoten in Yoshii-cho, Ukiha City, Fukuoka Prefecture. Kuriki Shoten was founded in 1897. My great-grandfather started out as a rice broker, then moved into the flour milling business, before setting up a noodle factory at the beginning of the Showa era.
