□My first taste of the sea "Haruhime" seaweed

 The opportunity to commercialize this "Nori Tsukudani" came from a visit to Fukunoehama Beach in Izumi, Kagoshima Prefecture, where the entire beach does not use acid treatment, a method known as marine pesticides, and the visit revealed the actual conditions at seaweed farms.

Yoshio Shimanaka makes delicious seaweed using the traditional "acid-free processing and drying method." Among many other things, he introduced us to a variety called "Haruhime" that is only cultivated in Izumi.

Although "Haruhime" has an extraordinary flavor, it also has the characteristic of having rough fibers. Even though Shimanaka works day and night to make delicious seaweed, there are parts of "Haruhime" that do not form into a single sheet of seaweed, which seems to be causing him a lot of trouble.

Therefore, we proposed "nori tsukudani" (simmered seaweed) in the hope that everyone would be able to enjoy the delicious flavor of the "Haruhime" seaweed.

We use 100% of this precious "Haruhime" seaweed and carefully simmer it with special seasonings to create a texture that allows you to really feel the shape of the seaweed.

Everyone from children to the elderly can enjoy this as the perfect accompaniment to their meals.

□ Kagoshima Prefecture Izumi limited [Haruhime] Nori seaweed

Yoshio Shimanaka, president of Izumi Tenkei Nori, a seaweed producer based in Izumi City, Kagoshima Prefecture, the southernmost seaweed farming area in Japan, harvests the power of the sea, wind, and sun to produce rustic, natural seaweed that is particular about preserving the original flavor of the seaweed.

Among all seaweed varieties that are packed with the natural deliciousness of seaweed, "Haruhime" stands out for its wild taste and umami. This product uses a generous amount of this limited edition "Haruhime" seaweed.

Matsuai Foods Naturally brewed whole soybean soy sauce

Traditionally, whole soybeans are used with great care and effort, and the soybean's oil and fat components are broken down during brewing, resulting in a soy sauce characterized by its "mellowness" and "deep umami flavor." This whole soy sauce is made using whole soybeans from Aso, Kumamoto, grown without pesticides or chemical fertilizers, wheat from Kikuchi, Kumamoto, and mineral-rich sun-dried salt, without any additives. The mellow aroma and rich flavor are maximized by slowly fermenting and aging for over a year.

□ Organic Sanshu Mirin

This authentic organic mirin is made using domestic organic rice and traditional Mikawa brewing methods.

The ingredients of mirin are glutinous rice, rice malt, and authentic shochu.

Steamed glutinous rice using techniques handed down for over 200 years is mixed with shochu and rice koji, and then after a long period of fermentation and maturation, it becomes mirin. It has a natural deliciousness that is not found in products that have been increased in volume by adding brewing sugar or brewing alcohol. It has a sharp, refined sweetness and a rich flavor. It is full of the umami and richness of the rice, which brings out the natural flavor of the ingredients.
