Kawagoe Shunsaku is engaged in natural farming in Tano Town, Miyazaki Prefecture, where pickle production is thriving.
These pickles are made with the utmost care, from ingredients to seasonings, and are completely additive-free, with a deep, natural flavor. The seasonings used are sun-dried lake salt, vinegar from the storehouse, and soy sauce aged in wooden barrels, and are slowly fermented with lactic acid.
It is a mild seasoning that brings out the flavor of the vegetables. By increasing the salt concentration, no preservatives or other additives are used, and the product is packaged in an easy-to-eat form after the salt is removed.
Kawagoe boasts some of the best soil in Kyushu
Toshisaku Kawagoe is a representative natural farmer in Miyazaki Prefecture.
At Purely, he is a farmer who has been very helpful to us with taro, ginger, radish, garlic, and shallots. Mr. Kawagoe is the organizer of a natural cultivation producers' association called "Yaezakura-kai," which is mainly made up of young people, and while he leads the natural cultivation farmers, he also puts effort into nurturing young farmers.
