It is a fine burdock with little bitterness and not hard even when it grows thick.
Kunibe's family originally grew burdock in a conventional manner, but switched to organic farming when Kunibe started farming in 2007. However, as insects and diseases appeared during cultivation, it felt unnatural, so they switched to natural farming in 2011 and have continued to do so ever since. The burdocks that were first shipped were very hard, and completely different from the burdocks we have today.
This year's burdock is the fruit of 11 years of soil preparation and seed harvesting. By drying the burdock, which is the culmination of Mr. Kunibe's hard work, you can enjoy it for a while longer.

The ingredients are naturally grown in Kyushu and slowly dried at low temperatures using the "Air Drying Method", resulting in a texture close to that of raw meat when rehydrated. [Ingredients] (serves 4)
1 bag of dried vegetables (burdock and carrot) 45g, A (2 teaspoons soy sauce, 1 tablespoon sake, 2 teaspoons mirin), 1 tablespoon sesame oil, 1 cup water, roasted sesame seeds (as needed) [How to make]
1. To rehydrate the dried vegetables, place a colander over a bowl, soak in boiling water for 5 minutes, then drain in the colander.
2. Add sesame oil to a heated frying pan and fry 1.
3. Add the water and sake and bring to a boil over medium heat. Once the water has evaporated, add the soy sauce, mirin, and roasted sesame seeds and mix lightly.
