This ponzu sauce is made with "Natural Harmony Wooden Barrel Matured Soy Sauce, Morita Soy Sauce" as the base. It is made with "Natural Harmony Jar-Prepared Pure Rice Vinegar", organically grown sugar, and organic mirin, and is made by carefully boiling natural bonito flakes and natural kelp without using any extracted extracts. It takes advantage of the aroma of naturally grown yuzu, and has a refined taste with just the right amount of acidity and subtle sweetness.

Founded in the 7th year of the Kansei era during the Edo period, Sakae Soy Sauce Brewery is located in Kakegawa City, Shizuoka Prefecture. The brewery has been committed to using wooden barrels and additive-free honjozo brewing for a long time.
The ingredients are only naturally grown wheat, naturally grown soybeans, and natural salt.
The water used for brewing is groundwater.
Then, using the natural koji mold that lives in the brewery, which Sakae Soy Sauce collected itself, the soy sauce is fermented for a period of two years to mature. This is the ultimate soy sauce, encapsulating the craftsmanship of the brewers.
This soy sauce alone can enhance the deliciousness of your food and bring out the flavor of the ingredients. Genuine soy sauce fermented by natural bacteria is rarely produced in Japan, making it extremely valuable.

Founded in 1903, the brewery is located in the mountains, blessed with clean air and water, and with large temperature differences between day and night, making it an ideal place for making soy sauce.
We are rooted in the local community and have continued to make soy sauce in traditional wooden barrels.
Soybeans are steamed and wheat is roasted to make koji, which is then stored in wooden barrels.
The soy sauce is then bottled and delivered to customers in our own brewery.
