The producer, Toyonaga Sayoko from Kumamoto Prefecture, has been cultivating her produce without pesticides or fertilizers for over 20 years, first using organic farming methods, out of her desire to produce produce that is truly safe to eat.
Together with his son, he grows a variety of vegetables throughout the year.

With domestically grown azuki beans themselves becoming rare, most are currently produced in Hokkaido, which has a cool climate.
Naturally grown azuki beans from Kyushu are particularly scarce.
After harvesting, the beans inside the pods are removed from the branches, dried in the sun, and the contents are removed.
If they are left as is, there will be foreign objects, misshapen pieces, and pieces eaten by insects, so they are passed through a sorting machine called a winnowing machine, which puts them through a sieve with different mesh sizes to remove misshapen pieces. Finally, they are visually sorted.
Even with such careful sorting, some may have holes in them, so please separate them before using.
If you make zenzai or red bean paste with it, it's delicious.
