This whole soybean soy sauce is made using whole soybeans from Aso, Kumamoto, which are grown under contract without pesticides or chemical fertilizers, wheat from Kikuchi, Kumamoto, and mineral-rich sun-dried salt, without any additives whatsoever.

This is one of Matsuai Foods' most special products, made using rare whole soybeans grown without pesticides or chemical fertilizers.
Soybeans from the Aso Plateau in Kumamoto Prefecture and wheat from Kikuchi are grown under contract by volunteer farmers without the use of pesticides or chemical fertilizers.
Every year, we visit the producers' fields to check on the growth of soybeans and wheat and hold study sessions together, valuing the face-to-face relationships we have built.

By slowly fermenting and aging it for over a year, we have been able to maximize the rich aroma and full-bodied flavor.

[What is Whole Soybean Soy Sauce?] 
Soybeans that have had the oil removed for use as an ingredient in soy sauce are called "defatted soybeans."
In the past, whole soybeans were used as the main ingredient in soy sauce, but whole soybeans contain fats and oils, which float on top of the raw soy sauce, which is made by squeezing out the various flavors of soy sauce, as soy sauce oil, so the oil had to be removed.
Therefore, it became mainstream to use "defatted soybeans" that have had the oil removed from whole soybeans and are processed for use as an ingredient in soy sauce. Soy sauce made from whole soybeans has its characteristics of being "mellow" and having a "deep umami flavor" as the fat and oil components in the soybeans are broken down during brewing.
In particular, whole soybeans grown domestically without pesticides or chemical fertilizers are rare.
