A luxurious jam made with organic sugar and naturally grown lemon juice, taking full advantage of the pectin naturally found in ripe fruit.
Blueberry harvesting reaches its peak in July and ends in August .
We made generous use of the blueberries that were collected little by little.
Because the process of making jam is simple, how to extract the pectin from the fruit, how well it is boiled down, and the proportions of ingredients are all very important.
The fruit is candied and left to sit for a few hours until it thickens sufficiently, then it is simmered carefully over low heat to allow the mixture to thicken naturally.
Regular jams may contain the additive pectin to thicken them, and may contain antioxidants instead of lemon juice.
Purely's original jams are carefully made to make the most of the pectin in the fruit. They also use mineral-rich organic sugar with a refined sweetness, and naturally grown lemon juice to prevent oxidation and tighten the sweetness.
Protecting and growing blueberries in a place loved by families
Sumiko Hirose runs the "Hirose Blueberry Garden" in Nishihara Village, Aso District, Kumamoto Prefecture. With the help of her family, she continues to grow and protect the blueberry trees that her father planted 30 years ago, without using any fertilizer or pesticides.
The farm is 5 tan in size and is located in a corner of a vast natural area with a spring water source nearby. About 500 blueberry trees are planted. There is no pruning, and thinning and weeding are done almost entirely by hand. In winter, bagworms that eat the buds appear, so they are removed by hand one by one.
Mr. Hirose ran a guesthouse in his 170 -year-old traditional house, alongside his farming business. However, in the 2016 Kumamoto earthquake, his house was partially destroyed and he was forced to close the guesthouse. He has not been able to resume business, but he has left the guesthouse as it is.
The blueberry farm shares the same sentiment, saying, "It's a place that my family loved, and it's a treasure, so I want to treasure it and preserve it." The blueberries are grown with that warmth from Mr. Hirose.
You can spread it on bread or mix it into yogurt to enjoy the rich, refreshing taste of blueberries.
