Purely's original rice koji is made by fermenting Kyushu-grown rice, grown without fertilizer or pesticides, using natural koji mold from Marukawa Miso's storehouse.
Currently, the mainstream method of producing koji mold is to use a "pure culture" which is a single strain of the fungus chemically cultivated.
The natural koji mold that lives in the brewery is extremely valuable, and it is said that there are only two breweries in Japan that can make rice koji by natural fermentation. Purely's original rice koji was specially prepared at Marukawa Miso in Fukui Prefecture, one of these breweries.
Rice koji made with natural bacteria is fermented by various beneficial bacteria interacting with each other, so it has a deeper flavor and umami than ordinary rice koji. Miso soup made with miso made with natural rice koji is so delicious that it doesn't need any dashi stock.
Even without adding sugar, amazake has a perfect balance of deep sweetness and mildness, making it an incredibly delicious amazake.
Please use it to make amazake, shio koji, soy sauce koji, miso, etc. at home. It's recommended because you can easily make your own original amazake and miso.
